Raphael: Ah, yeah, it's my last name, but it's a first name too in France.

Да, это моя фамилия, но во Франции есть и имя такое - Тибо

Todd: Oh, really

Raphael: Yeah! It's quite traditional. It's from the middle ages.

Raphael: Yeah, yeah, yeah!

Todd: Wow, Where are you from in France?

Так, а ты из какого района Франции?

Raphael: I just finished my studies in Paris, but I was born in the South. Actually, it's the place they make foie gras. If you know about foie gras.

Я только что закончил учёбу в Париже, но  родился на юге Франции. В том месте, где делают фуа-гра - если вы слышали о таком деликатесе

Todd: Yeah, yeah, yeah

Raphael: We used to eat on Christmas and..

Мы обычно ели фуа-гра на Рождество и...

Todd: What exactly is foie gras? Sorry, it's hard for me to say.

А что такое фуа-гра? Извини, мне трудно произносить это слово

Raphael: It's from the duck. It's um, how do you call it?

Это блюдо делают из гусей. Из...как это называется?

[прим.перев. - дословно "из уток", но фуа-гра - это паштет из гусиной печени]

Todd: The liver?

Raphael: Yeah, the liver! That's it. The liver, and it's cooked an official way and you can have it both like cold or hot, I mean, any kind, but the point is, the duck has to be fed in nature, right! It's not working if it's in a, industrial feeding duck

Да, из печени! Правильно. Её готовят по специальной технологии. Есть фуа-гра можно и холодным, и горячим - но самое главное, чтобы гусь (дословно : утка) был откормлен на природе - вот! После откорма в птичнике фуа-гра не получится

Todd: Oh, really!

Ты подумай!

Raphael: It doesn't produce really good foie gras, yeah!

Да, после откорма в птичнике фуа-гра получается не очень хороший!

Todd: So the duck must come from nature?

Итак, гусь (утка) должен быть откормлен на природе?

Raphael: Yeah, actually, that's why this place is famous for because it's countryside. There's no really big cities and most of the people are farmers so they actually produce some really good foie gras, like I heard the competition comes from East Europe now but they make more like industrial foie gras. It's a little different, but anyway, that's the place I'm born.

Да, именно этим знаменит район (откуда я родом). Там нет крупных городов, население в основном сельское - так то фуа-гра получается отлично. Слышал, что сейчас с нами пытаются конкурировать производители из Восточной Европы, но у них всё же "промышленное" производство фуа-гра. Это немного другое.  Короче говоря, вот в каком месте я родился

Todd: Wow! Is that the eastern side or the western side?

Да!!! Это на востоке или западе Франции?

Raphael: It's the southwest.

Это на юго-западе

Todd: OK, towards Spain.

Понятно, ближе к Испании

Raphael: Yeah, that's it. Exactly! Like below Bordeaux, a city called Bordeaux, it's a bit below this city.

Да, именно. Точно! Немного ниже города Бордо

Todd: OK, so Bordeaux is known for wine.

ОК, а сам город Бордо знаменит своими винами

Raphael: Yeah, yeah, exactly.

Да-да, точно

Todd: So, is it near the mountains or?

То есть район этот рядом с горами или как?

Raphael: It's not that close to Spain. It's, how can I say, yeah, it's not the extremity of France, it's more like center-south, you know.

Район этот не настолько близко от Испании. Это - как сказать? - не является крайней точкой Франции, скорее к югу от центра, так сказать

Todd: Oh, OK. Sounds like a pretty place though.

А, понятно. Наверное, красивые места

Raphael: What?

Что?

Todd: It sounds like a pretty place.

Говорю, наверное, места там красивые

Raphael: Yeah, yeah, it's quite nice. It's quite nice. I mean, it's countryside right. You have to like it. There's not a lot of things to do, but, I spent my life - till fifteen years old - I lived there and then I moved to another city called La Rochelle, which is close to the sea, just in front of the sea actually, and that's a better place. I like it much.

Да-да, красивый район. Очень красивый. Настоящая сельская местность - не может не понравиться. Заняться там особенно нечем, до пятнадцати лет жил там, потом переехал в город Ла Рошел вблизи моря, у самого моря - там получше . Мне этот город очень нравится.
